LOVE is in the air + Spicy Spring Gazpacho Recipe

So this week was Easter, Passover, and for me, I was and am still lucky enough to have a good friend visiting me from Columbia. Over the weekend she got engaged to an incredible man. I am so incredibly thrilled for her, and feel the love just oozing out of her being. It is seriously contagious! And with my family being far away over Easter, it's nice to have a good friend close by with such amazing energy. Although I don't physically see her as much as I would like, I feel so blessed to have her in my life. There is so much love there! 

So with so much community, love, and friendship swirling around, it reminds me that love is  what makes us feel human and whole. We can have all the 'stuff' in the world, be accomplished with our work, and enjoy all of the finer things in life, but without love and connection, we will NOT feel fulfilled and happy... and that's the good stuff! 

How can you create or nurture the connections and love you have in your life ALREADY?? After all,

Love is all around us.

It is our job to recognize it, nurture it and cherish it! Where is the love in your life that you have been taking for granted? I challenge you to reach out to those people (or animals!) TODAY, and nurture your garden of love.

And speaking of love, I made this amazing Spicy Gazpacho this weekend and I wanted to share it with you! So many recipes are so complex, but this one is not. It's soooo easy, fresh, and delicious!!!

Spicy Spring Gazpacho

Serves 3-4

  • 2 cucumbers (peeled)
  • 6 Roma Tomatoes
  • 4 cloves of Garlic
  • 1/2 Red onion 
  • 1 Red Pepper (cored)
  • Juice from 1 lime
  • Handful of Italian Parsley
  • 1/8 c Balsamic vinegar
  • 1/4 c Extra Virgin Olive Oil
  • 1/2 Avocado (optional- makes it creamier)
  • Salt and Pepper to taste (add at end)

Chop up all ingredients, and toss in blender. Blend. Add Salt and Pepper to taste.
